Coming from a farming family, Justine Lebas discovered a taste for raw products and cooking very early on. Her journey led her to hotel school, then to culinary creation and French craftsmanship, where she developed her sensibility and her perspective on materials.
Meeting peasant bakers marked a turning point: she discovered natural leaven and made it the heart of her practice. For three years, she refined her expertise in the bakery of Ferme d'Orvilliers, exploring fermentation, dough work, and the rhythm of life in an artisanal creative process.
Bread as Creation
Today, Justine Lebas continues her journey as a nomadic chef, making bread a true space for creation. Each loaf becomes unique: incisions, reliefs, and textures transform the surface of the bread into a living landscape.
Between technical mastery and intuition, she shapes her loaves as one sculpts a material. A sensitive and instinctive approach that naturally resonates with the Stella Forest universe, where patterns, textures, and materials also tell a story. This creative collaboration celebrates craftsmanship and savoir-faire.
